Charing Cross Hotel, Waverly

The Charing Cross Hotel is a longstanding pub and restaurant located in the suburb of Waverly, offering modern Australian classics and the usual pub fare. The venue itself has been operating since 1857 and was recently refurbished. We had the pleasure of visiting the ‘Charo’ as it is known locally, to check out one of the regular special Gourmet Dinner Sessions, this time featuring Jack’s Creek beef.

Beef Tongue – tongue pastrami, crostini, chimichurri, horseradish

Veal sweetbreads – crisp fried sweetbreads, nasturtium

Wagyu rump cap – tartare with nahm jim, chicherons and tapioca crisp

Pulled beef croquettes

Black angus oyster blade – 8hr oyster blade house mustard, kale, bottarga

Thrice cooked sunchokes with ranch

Kale and lemon
