Solander Dining and Bar is a Modern Australian restaurant located within the West Hotel, a boutique hotel that forms part of the Hilton family. The minute details with the interior design at Solander pay homage to native botanicals and flora from the local area and the venue is named after Daniel Solander, a first fleet Swedish botanist who was on board The Endeavour. The restaurant is run by executive chef David Vandenbeele who has significant experience in upmarket London and New York venues, David brings an internationally inspired menu with fresh, local and seasonal produce.
